All three of these apps let you send encrypted messages, and all three get referred to loosely as "the private one" by different people. They actually differ quite a bit in what's encrypted by default, what metadata gets collected, and who owns the company behind them — details that matter more than the shared "encrypted messaging app" label suggests.
Signal: encrypted by default, minimal data collection, nonprofit-owned
Every message on Signal is end-to-end encrypted by default — there's no separate mode to turn on. Signal is developed by a nonprofit foundation with no advertising business model, which removes the financial incentive that drives most "free" apps to monetize user data. Its metadata collection is also deliberately minimal — Signal has stated in response to legal subpoenas that it simply doesn't have most of the data being requested, because it was never collected in the first place. Telegram: encryption is opt-in, not default, for regular chats
This is the detail that surprises people: Telegram's standard cloud chats are not end-to-end encrypted by default — they're encrypted in transit and at rest on Telegram's servers, but Telegram itself technically has the ability to access that content, similar to how a standard cloud email provider works. End-to-end encryption on Telegram requires specifically starting a "Secret Chat," a separate mode most users never enable, and Secret Chats also lack some of Telegram's convenience features like cloud sync across devices. Telegram's strengths lie elsewhere — very capable large group and channel broadcasting features, unlimited cloud-synced chat history — but "privacy" specifically for one-on-one message content is not the app's default strong suit the way it's sometimes assumed to be.

How to actually choose
If your priority is genuinely minimizing what any company can collect about your conversations, Signal is the clearest choice. If most of the people you talk to are already on WhatsApp and switching everyone is impractical, WhatsApp's default encryption still meaningfully protects your message content. If you're using Telegram, know specifically that a regular chat isn't end-to-end encrypted unless you deliberately start a Secret Chat — and use that mode for anything sensitive.
